Dan’s Fried Squirrel

AGFC Educator, Cody Walker, fries up some squirrel and makes a great gravy to go with it.

Flour all the squirrel pieces and heat the vegetable oil in a large skillet. Place all the squirrel pieces in the skillet. It will be a skillet full, but make it fit. Salt and pepper to taste. Cook for about 20 minutes on medium heat, flipping every 5 minutes or so. Pull from the oil once they are golden brown.

To make the gravy, pour all but a few tablespoons of oil from the pan, leaving the small fried pieces in the pan. On low heat, add a few pinches of flour to the oil. Stir frequently, as to not burn the flour.

Once the flour is browned, add one cup of milk. Keep stirring until the gravy thickens. Salt and pepper to taste.
