Education Specialist, Wil Hafner, has the perfect recipe for those looking for a new fish dish or a way to take your catch to your next party.
Ingredients:
- 1 lb smoked bass fillets flaked
- 1 brick softened cream cheese
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon Worcestershire sauce
- 1/4 cup minced onion
- 1/4 cup seeded minced jalapeno
- 2 garlic cloves minced
- salt and pepper to taste
- Cajun seasoning to taste
- hot sauce to taste
Instructions:
- Season 1lb of bass fillets generously with your favorite Cajun seasoning. Smoke at 240 degrees for about an hour or until the fish is flaky. (I prefer apple or pecan wood for fish.) Let cool before adding to the rest of the ingredients.
- Combine all ingredients in a bowl and mix well. Chill for 1 – 2 hours before serving.
- Serve with crackers.
